Ma Lueck Pumpkin Cookies
Cream Together:
½ cup shortening
1 cup sugar
1 cup pumpkin
Add:
1 cup raisins or dates
½ cup nutmeats
1 teaspoon vanilla
Sift together and add to the above ingredients:
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
2 cups sifted flour
1 teaspoon baking powder
Drop by spoonful onto greased baking sheet.
Bake at 360° - 375° F for 8 minutes or until lightly browned.
Frost with Carmel Icing
Caramel Icing
5 Tablespoons butter, melted
1 cup brown sugar
1 teaspoon vanilla
¼ cup milk
powdered sugar
Boil butter, brown sugar and milk for 3 minutes.
Cool, add vanilla and enough powdered sugar for spreading consistency.
This amount of icing will probably frost a double recipe of the cookies.
